Hubby's Lunch Special!

Yesterday, I got some Hawaiian bread at the store.  It came in a loaf, not the usual round style or buns.
Even the clerk was surprised to see it in the loaf form. Anyway, I tried having toast with it, and I didn't care for it because it was a little too sweet.   Hubby tried it and said, "This would make great french toast!"  Then he proceeded to make french toast for lunch!  Oh well, I didn't have to figure out what to make!  :)

He made-up a great recipe and I thought that I should share it! It made a great Sabbatical lunch!!



5 slices Hawaiian bread
2 eggs
1/3 cup milk
t. vanilla
1 packet Splenda (my hubby is diabetic, so he used Splenda. You might prefer 1 t. sugar) 
sprinkle of cinnamon

He dipped the bread in all the mixed ingredients and fried it on the griddle.  Then he added chopped strawberries and whole blueberries to the top---no other toppings were used.  


The first strawberries and blueberries of our season here in Oregon are available, so it was a perfect time to use them!


 Give the recipe a try and see if you don't think, like I do, that this makes a great meal!

Family!

My last post was about being blessed!  Well, it's past mother's day and I still feel blessed! This weekend,  I spend the day at a fast-pitch Softball tournament that my granddaughter Courtney was playing in. A large group of family and friends were there to watch her last games as a community college player.

 We entertained the little ones, had a picnic and spent the evening visiting another of our family members.

Family is very precious and I love spending time with them!  Later in the evening, I babysat the youngest grand: Emriella!! Age 11 weeks!

I am blessed!

I am the mother of ten!  And I am blessed!  I am not only blessed with awesome kids, and grandkids and two great-grands (I know, I'm too young to have Great grands!) but I am blessed with gifts this mother's day!


My oldest son got me a new phone!  My DIL and I went to a boutique fabric shop and she bought me a bundle of awesome fabrics!  Then, hubby bought me a pair of Birkenstocks which I have been craving for about a year!



My daughter, Elaine took me to breakfast, and we got pedicures on Saturday with my granddaughter Taylor and my other daughter Jackie, and tonight I'm having dinner with Jackie and family! (Had lunch with my son and family outdoors at the Bamboo Gardens  for Hawaiian cuisine.)  I am truly blessed!  And appreciate my family!

Prayer?


Ever felt like the weight of the world was heavy on your heart? 

I'm not a worrier by nature, but I have felt the weight of family problems at times.  It felt like the weight of the world.  What did I do?  I did the only thing that I could do--Pray!
I know, some of you do other things--it's all good.  Some "send up good thoughts".  Nevertheless, it's helpful to bear your heart to something greater than yourself!  What gives relief is a trust in a "higher power".  My trust is in the God called Yahweh -- "I AM."  I take my cue to pray from some of His scriptures:

Is any one of you in trouble? He should pray. James 5:13 NIV

Be joyful always;  pray continually; give thanks in all circumstances, for this is God's will for you in Christ Jesus.  1 Thess. 5:16-18 NIV


Prayer is a part of my sabbatical, a big part!

Sunshine on my shoulders

A couple of days this week, the temps climbed to near 90 degrees! It was a glimpse of summer!



I, personally, am not a fan of summer, since I grew up in a desert valley that was extremely hot all summer! I can remember hot summer nights when it would cool off a bit, and everyone would flock outdoors to sit in the grass, go for ice cream, or just look at the stars--some of my fondest memories of summer there.



I much prefer the Pacific Northwest, where I live now, because I love the cloud cover, the rain and pleasant temps!!  Love spending quiet time on the deck in the cool evenings.
